Slow Cooker Latin-Style Mojo Pork

This slow cooker mojo pork is bright, garlicky, and citrus-forward, inspired by classic Caribbean and Latin flavors. It’s tender, versatile, and perfect for tacos, bowls, sandwiches, or served simply with rice and beans.

Unlike pernil, mojo pork focuses more on citrus and garlic than herbs, making it a great option when you want something lighter but still deeply flavorful.

Ingredients

  • 3–4 lb boneless pork butt (pork shoulder)
  • 1 large onion, sliced
  • 6–8 cloves garlic, minced or crushed
  • 1 cup orange juice
  • ΒΌ cup lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1Β½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • Β½ teaspoon chili powder (optional, for warmth not heat)
  • 1 bay leaf

Instructions

  1. Place the sliced onion in the bottom of the slow cooker.
  2. Place the pork butt on top of the onions.
  3. In a bowl, whisk together the garlic, orange juice, lime juice, olive oil, cumin, oregano, salt, black pepper, smoked paprika, chili powder (if using), and bay leaf.
  4. Pour the citrus mixture over the pork.
  5. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours.
  6. The pork is done when it easily shreds with a fork.
  7. Remove the pork, shred it, then return it to the cooking juices for 10–15 minutes before serving.

Optional: Crispy Mojo Pork

For crispy edges, spread the shredded pork on a baking sheet and broil for 3–5 minutes, watching closely. Spoon some of the cooking juices over the pork before serving.

Serving Suggestions

  • Serve over white rice with black beans
  • Use as taco or burrito filling with cilantro and lime
  • Pile onto rolls for sandwiches
  • Add to grain bowls with avocado and fresh vegetables

Storage & Leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze shredded mojo pork with some of the cooking juices for up to 3 months. Reheat gently with a splash of broth or reserved juices.

Kitchen Confidence Tip

Mojo pork is very forgiving. If your citrus measurements are not exact, it will still turn out bright and flavorful. Taste and adjust with extra lime juice if needed.
